Khus Khus ki Kheer
Ingredients:-
1/2 cup khus khus or poppy seeds
1/2 cup desiccated coconut or grated coconut
1/2 cup sugar
4 cups milk + 8 tablespoon milk
2 tablespoon of ghee
8-10 chopped cashew
8-10 chopped almonds
8-10 chopped pistachio
8-10 chopped walnut
(You can take nuts of your choice)
1 tablespoon of green cardamom
Method:-
1) First of all take 1/2 cup of khus khus(poppy seeds) and add in the heated pan.
2) Roast it well for 2-3 minutes or until it turns little light golden.
3) Transfer this roasted khus khus(poppy seeds) in a bowl.
4) Add water into this and let it soak for 3-4 hours.
5) After 3-4 hours, remove the water from the khus khus (poppy seeds).
6) Add this soaked khus khus(poppy seeds) in the mixer jar along with 1/2 cup of desiccated coconut or grated coconut.
7) Add 8 tablespoon of milk so that it will grind easily and grind it well into fine paste.
8) Transfer this paste in a bowl.
9) Now take a big pan and add 2 tablespoon of ghee. Let it heat.
10) Once the ghee is heated up add all the chopped nuts like cashew, almonds, pistachio and walnuts.
11) Roast it for 2-3 minutes or until it turns into light golden colour.
12) Once the nuts are roasted its time to add the khus khus(poppy seeds) and coconut paste in the pan.
13) Mix it well.
14) Mix everything well and cook it for sometime or until it changes its colour into light pink. Keep on stirring so that it will not stick to the pan.
15) Now add 4 cups of milk and mix everything well.
16) Keep on stirring so that it will not stick to the pan.
17) Keep mixing it until the boil comes.
18) Once the boil comes add 1/2 cup of sugar and mix it well. You can add sugar as per your taste.
19) Keep stirring it. Kheer is that which you can not leave it for cooking so keep mixing it and make sure it doesn't stick to the pan.
20) It will start boiling. Once it starts boiling add 1 tablespoon of green cardamom powder and mix it well.
21) Keep stirring for another 5-10 minutes.
22) Its ready to serve. Now transfer the kheer in a large bowl.
23) Serve hot or chill as you preferred. Enjoy this delicious, yummy and creamy "Khus Khus Ki Kheer" with your family.
