Kesar or Saffron Dahi/Curd

Ingredients:-
5 tablespoon of thick curd or yugurt
1 tablespoon of milk
pinch of kesar or to give ornage colour
1/2 teaspoon of green cardomam
3 tablespoon of sugar

Method:-
1) Take thick curd in a bowl.
2) Add pinch of kesar or saffron into little milk(1 tablespoon) or until it turns into orange colour.
3) Add this saffron mixture into thick curd along with green cardomam and sugar.
4) Mix everything well. Make sure there is no lumps in it.
5) Enjoy this delicious with wonderful saffron aroma Curd.

Dates & Coconut Cookies Ice Cream Sandwich

Ingredients:-
11-12 seedless dates
8 tablespoon of milk
1/2 cup of walnuts
1 1/2 cup desiccated coconut or coconut powder
6 tablespoon of vanilla ice cream

Method:-
1) First of all in a mixer jar add seedless dates along with 4 tablespoon of milk and grind it well.
2) Make a smooth paste.
3) Transfer this in a bowl.
4) In the same jar add walnuts along with 4 tablespoon of milk and grind it well.
4) Transfer it in the same bowl with dates paste.
5) Now add coconut powder and mix everything well.
6) Spread equally in a flat dish and make a cut in between using knife.
7) keep it in freezer to set for 3 hours.
8) Take it out after 3 hours and separate both the portion from the cut in center.
9) Now on one side top it with some vanilla ice cream. Spread it like you do with bread and jam.
10) Put the other portion on it just like sandwich.
11) Set it in freezer for overnight.
12) Cut it into square shape and enjoy this delicious nutty and ice cream flavor sandwich.

Sarso ka Saag Recipe

Ingredients:-
7 cups of mustard leaves(sarso) or 1 bunch of mustard leaves(sarso)
5 cups of spinach
1 big tomato
3 tablespoon of crushed ginger & garlic
2 crushed green chilli
Salt to taste
1 cup of water
2 tablespoon of makkai atta or corn flour
For tempering:-
4 tablespoon of Ghee
2 tablespoon of crushed ginger & garlic
1/2 chopped onion
1 teaspoon of red chilli powder

Method:-
1) Take a big pan and add mustard leaves, spinach, big tomato cut into big pieces, crushed ginger & garlic, green chilli, salt to taste, water. Mix everything well.
2) Let it cook.
3) Keep stirring it in every 15 minutes. Close the lid and let it cook.
4) It will take 50-55 minutes to cook.
5) Let it cook on medium flame and keep on stirring in every 15 minutes.
6) Slowly it will reduces its quantity.
7) Add 2 tablespoon of makkai atta or corn flour and mix it well.
8) For tempering take a pan and add ghee. Let it heat.
9) Add crushed ginger & garlic and chopped onion. Mix it well until it turns soft.
10) Add 1 teaspoon of red chilli powder and mix it well.
11) Now pour this tempering in the saag and mix everthing well.
12) Let it cook for another 10 minutes.
13) Its ready to serve.
14) Enjoy this delicious saag with makkai ki roti.
